Did you know way back when&#8230;oh maybe a year ago, I was on this oatmeal kick. I had oatmeal everyday for breakfast. That was what I was in the mood for, every single day. Oatmeal with raisins, oatmeal with bananas, with strawberries, or with honey. Anything with oatmeal. I think it was after Nathan was born and then went on for months and months if not for a year. Then one day I didn&#8217;t want it anymore. Breakfast was harder then, always with the, what shall I have today?</p>
<p>Well, lately, I&#8217;ve been in the mood for strawberry smoothies, not a strange everyday kick, only once in a while when the mood hits. So, today, I thought I&#8217;d share how I make my strawberry smoothies.</p>

All that is needed is these four ingredients: raw almonds, water, frozen bananas, and strawberries.</p>

Boil the almonds for 3 minutes in water.</p>

Throw the peeled almonds into a blender and blend with a cup of water. Strain the pulp if you like. </p>

<li class="ingredient">1/4 cup raw almonds</li>
<li class="ingredient">1 cup water plus extra for boiling</li>
<li class="ingredient">handful of frozen bananas</li>
<li class="ingredient">handful of strawberries</li>
</ul>

<li>Bring an inch of water to boil in a saucepan. Add raw almonds and boil for 3 minutes. Drain almonds and set aside to cool.</li>
<li>While almonds are cooling wash and remove leaves from strawberries. Then peel skins off almonds. </li>
<li>Put 1 cup of water in blender with peeled almonds and blend until white and creamy. You can strain your almond pulp if you want but I like the extra nuttiness in my smoothies.</li>
<li>Add frozen bananas and strawberries. Blend until desired consistency.</li>
</ol>

Start with some finely diced up onion. Add a squeeze of lime to this.</p>

Roast tomatoes, garlic, and jalapeño pepper.</p>

While those are roasting, grab some cilantro and chop it up finely.</p>

Your roasted garlic, jalapeños, and tomatoes should be a bit blackened.</p>

We seed the jalapeños but leave them if you like the heat. Then pulse the tomatoes, jalapeños, and garlic up in a food processor. Add the chopped cilantro and salt to taste. </p>

<li class="ingredient">1/4 medium yellow onion, finely diced </li>
<li class="ingredient">1/2 Tbs. fresh lime juice </li>
<li class="ingredient">3 medium Roma tomatoes </li>
<li class="ingredient">2 jalapeño  peppers </li>
<li class="ingredient">1 clove garlic, peeled </li>
<li class="ingredient">1/2 cup chopped fresh cilantro </li>
<li class="ingredient">1/2 tsp. kosher salt; more to taste </li>
<li class="ingredient">2 avocados, smooshed</li>
</ul>

<li>Soak the onion in the lime juice. Roast tomatoes, jalapeños, and garlic until blackened. We do this in a cast iron skillet. They&#8217;ll finish at different rates so keep an eye on them and take them off as each one is done. Seed the jalapeños if you want. Pulse in a food processor then add to the onion and lime juice. Mix in cilantro then salt to taste. Stir in smooshed avocados. </li>

I was going to write about our homeschool meetup today but it&#8217;s late. So, instead I&#8217;m going to share a cookie recipe.</p>
<p>A few weeks ago, we made some gingerbread cookies. Flume shaped. What is a flume you ask? I don&#8217;t know exactly. I always thought flume was used like, <em>a flume of water</em>. But recently, during extremely cold weather in the mornings, my phone has been forecasting flumes with pictures of snowflakes. I&#8217;ve never heard that term applied to something that looks like a snowflake. And snow?! In my area? Really, dear phone? You must be mistaken.</p>
<p>But anyhoo, cookies. This is my favorite gingerbread cookie recipe from Cook&#8217;s Illustrated. I like them because they&#8217;re soft and chewy, not crunchy.</p>
<p>Maybe this recipe was not the best use of this awesome snowflake cookie cutter we got from <a href="http://www.futuregirl.com">Alice</a>. <em>Thank you Alice!</em> The cookies spread too much and the little shapes I cut in the big snowflake, baked closed. Oh well. They were still yummy.</p>
<p>Oh and see the little divot in the small flume? I was busy with Nathan when that batch beeped in the oven. I told Alan to check it gently. I walked into the kitchen later to find a whole bunch of cookies with these very noticeable divots in them. Bwa ha ha! That&#8217;s not what I meant by gentle.</p>

<h2 class="fn">Thick and Chewy Gingerbread Cookies</h2>

<li class="ingredient">3 cups unbleached all-purpose flour</li>
<li class="ingredient">3/4 cup packed dark brown sugar</li>
<li class="ingredient">1 tablespoon ground cinnamon</li>
<li class="ingredient">1 tablespoon ground ginger</li>
<li class="ingredient">1/2 teaspoon ground cloves</li>
<li class="ingredient">1/2 teaspoon table salt</li>
<li class="ingredient">3/4 teaspoon baking soda</li>
<li class="ingredient">12 tablespoons unsalted butter (1 1/2 sticks), cut into 12 pieces and softened slightly</li>
<li class="ingredient">3/4 cup unsulphured molasses</li>
<li class="ingredient">2 tablespoons milk</li>
</ul>

<li>In food processor workbowl fitted with steel blade, process flour, sugar, cinnamon, ginger, cloves, salt, and baking soda until combined, about 10 seconds. Scatter butter pieces over flour mixture and process until mixture is sandy and resembles very fine meal, about 15 seconds. With machine running, gradually add molasses and milk; process until dough is evenly moistened and forms soft mass, about 10 seconds. <strong>Alternatively</strong>, in bowl of standing mixer fitted with paddle attachment, stir together flour, sugar, cinnamon, ginger, cloves, salt, and baking soda at low speed until combined, about 30 seconds. Stop mixer and add butter pieces; mix at medium-low speed until mixture is sandy and resembles fine meal, about 1 1/2 minutes. Reduce speed to low and, with mixer running, gradually add molasses and milk; mix until dough is evenly moistened, about 20 seconds. Increase speed to medium and mix until thoroughly combined, about 10 seconds.</li>
<li>Scrape dough onto work surface; divide in half. Working with one portion of dough at a time, roll 1/4-inch thick between two large sheets of parchment paper. Leaving dough sandwiched between parchment layers, stack on cookie sheet and freeze until firm, 15 to 20 minutes. (Alternatively, refrigerate dough 2 hours or overnight.)</li>
<li>Adjust oven racks to upper- and lower-middle positions and heat oven to 350 degrees. Line two cookie sheets with parchment paper.</li>
<li>Remove one dough sheet from freezer; place on work surface. Peel off top parchment sheet and gently lay it back in place. Flip dough over; peel off and discard second parchment layer. Cut dough into 5-inch gingerbread people or 3-inch gingerbread cookies, transferring shapes to parchment-lined cookie sheets with wide metal spatula, spacing them 3/4 inch apart; set scraps aside. Repeat with remaining dough until cookie sheets are full. Bake cookies until set in centers and dough barely retains imprint when touched very gently with fingertip, 8 to 11 minutes, rotating cookie sheets front to back and switching positions top to bottom halfway through baking time. Do not overbake. Cool cookies on sheets 2 minutes, then remove with wide metal spatula to wire rack; cool to room temperature.</li>
<li>Gather scraps; repeat rolling, cutting, and baking in steps 2 and 4. Repeat with remaining dough until all dough is used.</li>

<p class="quicknotes"><em>Note how I bolded &#8220;alternatively&#8221;? Sometimes when I&#8217;ve made a recipe before, I do not read the recipe through before cooking. And the last time I made these cookies was one of those times. My food processor is on it&#8217;s last legs. Or I should say my food processor bowl. It&#8217;s cracked and a piece falls out regularly. Some rubber ring thing is completely missing I think. And I would have preferred to have made these cookies in my standing mixer, that is working fine, but the recipe called for a food processor. Or so I thought. I really should have read the recipe through. And that is why I bolded it for any of you out there who have a food processor on it&#8217;s last legs or are just rushing to make yummy cookies and not reading through the recipe either. <img src='http://www.kukyideas.com/journal/wp-includes/images/smilies/icon_biggrin.gif' alt=':-D' class='wp-smiley' /> </em></p>

<p>A month ago or something like that (I cannot remember), my sister sent me a link about milk possibly causing eczema. After our struggles with Nathan and his poor face I was willing to try eliminating milk from my diet. And it worked! Did you notice how nice his face looked in the pictures from his birthday party? <p>It took a bit after I stopped drinking milk for his face to heal but then after that, it just stayed good. We wondered if it was really such a simple thing, the milk. So, one day we gave it a test. I drank some milk. Immediately, that day, he started scratching at his face again. Can&#8217;t be a coincidence right? So, I&#8217;m off of cow&#8217;s milk again. And it seems to be working again.</p>
<p>I now drink almond milk. Homemade almond milk! I don&#8217;t drink milk that frequently so I make only about 2 cups at a time so it doesn&#8217;t go bad. Here&#8217;s how I make it:</p>

<li class="ingredient">2 cups of water + extra for soaking</li>

<li>Pour enough water to cover the almonds. Soak for six hours.</li>
<li>Drain the almonds then blend with 2 cups of water.</li>
<li>Strain the almond pulp. You can save the pulp to eat later. I put it on top of my oatmeal with honey and cacao nibs. Yum! Store your almond milk in an air tight container. It should last about 4 days.</li>

<p class="quicknotes">You can easily double this recipe if you drink more milk. You may also add soaked dates or vanilla bean seeds for sweetness but I haven’t tried that yet. I think plain almond milk tastes yummy just the way it is.</p>

<p>The only catch for me is, I don&#8217;t know exactly what is wrong with cow&#8217;s milk that is effecting Nathan. So, what else do I need to avoid? Cheese? Heavy whipping cream? What do I replace those with? And do I have to worry that he shouldn&#8217;t drink cow&#8217;s milk himself?</p>
<p>It&#8217;s too much to think about. Maybe I should just hope the milk thing is a coincidence and his face got better because he outgrow it. Yeah, let&#8217;s all hope really hard that&#8217;s what it is.</p>

<li class="ingredient">2 (10 ounce) cans Ro-Tel tomatoes, drained, 1/2 cup juice reserved</li>
<li class="ingredient">1 (16 ounce) can refried beans (I usually use 20 ounce because that&#8217;s what they have at my store)</li>
<li class="ingredient">1 tablespoon hot sauce</li>
<li class="ingredient">1/4 cup chopped fresh cilantro</li>
<li class="ingredient">3 cups shredded Mexican cheese blend</li>
<li class="ingredient">1 1/2 pounds 90-percent-lean ground beef</li>
<li class="ingredient">1 (1.25 ounce) package low sodium taco seasoning mix</li>
<li class="ingredient">12 taco shells</li>
<li class="ingredient">3 scallions, sliced thin</li>
</ul>

<li>Heat the oven to 475 degrees. Cook beef in a large skillet over medium high until it&#8217;s no longer pink, about 5 minutes. While that is cooking, drain and save the juices from one can of tomatoes. Pour the tomatoes into a 13 by 9 inch baking dish. Add beans, hot sauce, and cilantro. Mix together and then spread evenly. Then sprinkle with 1 cup of cheese.</li>
<li>When the beef is no longer pink, pour off the fat and stir in the package of taco seasoning. Drain and save the juices from the other can of tomatoes. You only need 1/2 cup of juice. Add those tomatoes and the 1/2 cup of tomato juice to the beef. Reduce heat to medium low and simmer until thickened and almost dry. That will take about 5 to 7 minutes.</li>
<li>While you are waiting spoon 1 tablespoon of cheese into each taco shell and arrange upright in the bean mixture. Once the meat is done, spoon beef mixture evenly into each shell. Cover with foil and bake until bubbling, about 10 minutes. Then remove the foil and top with the left over cheese and bake until the cheese is all melty, takes 4 to 6 minutes. Sprinkle with scallions and eat.</li>

<li class="ingredient">1 1/4 pounds flank steak, cut into thin slices</li>
<li class="ingredient">2 tablespoons soy sauce</li>
<li class="ingredient">1/3 cup hoisin sauce</li>
<li class="ingredient">1/3 cup water</li>
<li class="ingredient">1/2 teaspoon red pepper flakes</li>
<li class="ingredient">2 tablespoons vegetable oil</li>
<li class="ingredient">1/2 pound snow peas</li>
<li class="ingredient">4 garlic cloves, minced</li>
<li class="ingredient">1 tablespoon minced fresh ginger</li>
<li class="ingredient">1/2 cup unsalted roasted cashews</li>
</ul>

<li>Put the raw steak in the freezer for 15 minutes for easier slicing. Slice steak into three long strips with the grain. Then slice each strip into 1/8 inch slices. </li>
<li>Mix the steak with soy sauce and cover and refrigerate for 15 minutes. Whisk hoisin sauce with water and pepper flakes and set that aside.</li>
<li>Heat 2 teaspoons of oil in a large nonstick skillet over high heat. Add half of the steak and cook for 1 minute. Then toss until they&#8217;re a little brown on the edges. Set that aside and repeat with the other half.</li>
<li>Heat the last 2 teaspoons of oil and cook snow peas for two minutes. Then in the center of the pan add the garlic and ginger cooking for 45 seconds. Then toss in the steak.</li>
<li>Rewhisk the hoisin mixture then pour it into the pan and let it thicken for about a minute. Stir in the cashews and it&#8217;s good to eat. </li>

<li class="ingredient">2 envelopes unflavored gelatin</li>
<li class="ingredient">1/4 cup plus 2 tablespoons sugar</li>
<li class="ingredient">1 cup heavy cream</li>
</ul>

<ol class="instructions">
<li>Open only 1 can of root beer. Soften the gelatin by placing 1/2 cup of root beer in a bowl and sprinkling the gelatin over the top. Leave for 5 minutes to soften the gelatin.</li>
<li>Bring 1 cup of root beer and the 1/4 cup sugar to boil in a small saucepan stirring to dissolve the sugar. Remove it from the heat and whisk in the gelatin mixture until all the lumps are dissolved. Pour into a different bowl and let it cool to room temperature. Once it&#8217;s cooled, open the second can of root beer and gently stir in the remaining 1 1/2 cups of root beer trying not to deflate the bubbles. The idea is, since you opened the 2nd can later, it won&#8217;t be flat and you&#8217;ll have more fizz for a bubbly root beer cap. I could never manage that though. Refrigerate until firm, at least 6 hours or up to 1 day.</li>
<li>When the root beer is firm, start your whipped cream. Beat the heavy cream with the 2 tablespoons of sugar until it holds soft peaks.</li>
<li>Spoon 1/8 of root beer jello into 4 cups. Top with 1/8 of whipped cream. Repeat with the rest of the jello and whipped cream and top with the cap of bubbly root beer. Or in my case just more jello since all my bubbles deflated.</li>

<p>I like this recipe though it was strange at first. I&#8217;m not used to jello being carbonated but it grew on me. Weird but in a good way. But I&#8217;m the only one who eats this. Alan thinks root beer jello is strange and Isabelle will only eat the whipped cream.<br />

<li class="ingredient">2 cups of cherry tomatoes, cut in half</li>
<li class="ingredient">1 t sugar</li>
<li class="ingredient">1 medium garlic clove, minced</li>
<li class="ingredient">1 t grated zest and 1 T juice from 1 lemon</li>
<li class="ingredient">salt and pepper</li>
</ul>

<li>Heat the olive oil in a skillet over medium heat until it&#8217;s shimmering. Then add the peas and cook for about 2 to 3 minutes until the peas are sort of tender but still crisp. I like them with a bit of snap to them. </li>
<li>Transfer to a serving bowl then add the cherry tomatoes (I used heirloom tomatoes in this picture), sugar, garlic, and lemon zest to the skillet and cook for 30 seconds. Add the lemon juice and sugar snap peas. Toss well. Season with salt and pepper to taste and serve.</li>

<p>According to the magazine the sugar balances the acidity from the lemon juice. Snap peas and cherry tomatoes are yummy by themselves so sometimes I don&#8217;t even bother adding the sugar, lemon, or garlic. </p>

Maybe that&#8217;s why she prefers to have it fed to her, instead of doing it herself. That way she doesn&#8217;t lose a single bit. The other day I made some bread pudding. Alan doesn&#8217;t like bread pudding but Isabelle does. I mean she REALLY likes it. Maybe that&#8217;s why she prefers to have it fed to her, instead of doing it herself. <p><b>Update</b>- I combined two recipes (one from Cook&#8217;s Illustrated and one from Cook&#8217;s Country) to make these individual bread puddings.  I&#8217;m not exactly sure what I did but here&#8217;s what I think it was:</p>

<li class="ingredient">1 tablespoon unsalted butter, melted, plus extra for greasing ramekins</li>
<li class="ingredient">1/4 teaspoon ground cinnamon</li>
<li class="ingredient">1/3 cup sugar, plus 1 tablespoon for cinnamon sugar</li>
<li class="ingredient">2 large eggs</li>
<li class="ingredient">1 cup milk</li>
<li class="ingredient">1 cup heavy cream</li>
<li class="ingredient">1 teaspoon vanilla extract</li>
<li class="ingredient">1/8 teaspoon table salt</li>
<li class="ingredient">1/4 teaspoon ground nutmeg</li>
<li class="ingredient">4-5 slices of firm white bread, cut into 1 1/2 inch squares (5 cups)</li>
<li class="ingredient">OPTIONAL, 4 tablespoons chopped bittersweet chocolate</li>

<li>Butter 4 ovensafe ramekins.</li>
<li>Make cinnamon sugar by mixing 1/4 teaspoon cinnamon with 1 tablespoon of sugar. Set this aside.</li>
<li>Whisk the eggs and 1/3 cup of sugar in a large bowl. Add the milk, heavy cream, vanilla, salt, and nutmeg. Whisk together and transfer to a large measuring cup for easy pouring.</li>
<li>Set aside 1 cup of bread. Fill each ramekin with remaining bread squares (if you want a hidden surprise you can add 1 tablespoon of bittersweet chocolate after the first layer of bread slices). Pour custard over bread. Let sit for 20 minutes while you heat the oven to 325 degrees with the rack in the middle position.</li>
<li>After the 20 minutes wait, put remaining 1 cup of bread in each ramekin pushing down to partially submerge. Brush the exposed bread with melted butter then sprinkle with the cinnamon sugar. Bake for about 25 to 30 minutes. The puddings should be set but still a little bit wobbly.
