Does Anyone Have a Quick Fruit Dessert Recipe

I like dessert, any kind of dessert. Usually I prefer chocolate but sometimes I crave fruit. My usual fruit dessert is apple pie. I like the apple pie recipe I use but it takes way too long to make and to cool. So I’ve been on a search for a quicker fruit dessert.

I came across a recipe for a rustic fruit tart. It’s a “cooking without recipes” recipe from Fine Cooking. What does that mean? Well “cooking without recipes” lays out the basics and you can customize the ingredients to your liking.

So first I tried a rustic pear tart.

It was o.k. but the pears didn’t work really well. I didn’t like the way they looked, they reminded me of mushrooms. The texture of the pears also wasn’t to my liking. I think I should have peeled them. And it wasn’t exactly quick.

But I tried the recipe again because the pears were so disappointing. The second time around I had blackberries and strawberries. I had just bought some little tins so instead of one big tart I thought I’d try four individual tarts.

Originally I was planning to just bake the tarts with the fruit sitting right on top of the dough. But they looked ugly and messy. I had leftover dough so I cut some strips out and laid them on top. Much prettier.

But again it’s not a quick fruit dessert. There’s the mixing and then letting it rest in the fridge for 15 minutes. Then the rolling, making the filling, the egg wash, and it takes 50 minutes to cook! Wow I’m tired just from typing all that out much less cooking it. But if anyone wants this recipe let me know.

So…anyone have a good quick fruit dessert recipe?

  1. My favorite (and it’s super quick) is my grandma’s peach cobbler…you use canned peaches in syrup or you can use other canned fruit. You can also use fresh but you’ll want to cook the fruit in a pot with a little sugar to soften them a bit (that takes more time). Also, frozen is good but you’ll want to defrost them first. I’ve got this memorized so my instructions aren’t “recipe technical”. My favorite part is the edges; they’re buttery and chewy.

    Cobbler

    ½ cup butter
    1 ¼ cup sugar
    1 cup flour
    1 cup milk
    2 tsp. baking powder
    ¼ tsp. salt
    cinnamon
    1 15-16 oz. can peaches in syrup, sliced (I use Del Monte sliced peaches in heavy syrup in the 15.25 oz. can)

    Melt butter in the casserole dish you are using, use 8×8 or a 9×13. Add a few shakes of cinnamon to the drained peaches. Combine all ingredients except for cinnamon and peaches together. Spoon batter over the butter and add peaches evenly; DO NOT stir. Bake 350 until golden brown, 20-30 mins.

  2. Fruit Crisp Desserts are my favorite. Mix 1/2 cup flour, 1/2 cup oatmeal, 1/2 cup sugar. 1/4 tsp cinnamon and 1/4 cup butter. Sprinkle this on top of 4 cups of fruit such as peeled and diced apples or blueberies or peaches which you have placed in a buttered baking dish. Bake at 350 for 30-40 minutes.

    If you really like the topping, make twice as much for 4 cups of fruit. If you really like more decadence, plop some ice cream on top.

  3. Shanna beat me to it…I was going to suggest cobbler! The recipe she gives is similar to ones on AllRecipes.com for easy fruit cobbler. You can also use fresh strawberries, blackberries, raspberries, blueberries, or some combination without cooking them first.

  4. you can google these simple recipes and get a variety of results. look up “dump cake” or “one cup cobbler”. the first is the easiest and you can put what ever kind of fruit you want in it although traditionally its done with pineapples and cherry pie filling. the second one you can add what ever kind of fruit as well. i’ve done it with peaches and raspberries… sort of a peach melba cobbler and evn blackberries are delish.

  7. I’ve been making a lot of baked apples to use up all the apples I get in my weekly delivery of local organic produce. The kids in my life love them. Just core an apple, leaving the peel on, stuff with raisins, sprinkle with demerara sugar and cinnamon and a dollop of butter and bake until soft.

    The other thing I love, for summer, is grilled fruit with sabayone. The sabayone (custard) takes some arm power, but you always have the ingredients on hand (eggs, sugar, some liquid like juice, or alcohol for grownups).

  8. Here’s my favorite. You need refrigerated sugar cookie mix, fresh fruit (bananas, grapes, berries, orange sections etc.). Then you need some cream cheese and powdered sugar and vanilla.
    Got it all?
    OK now, slice that cookie dough up (1/8 inch?) and line a pizza pan with it. Make sure they touch or overlap here and there. Bake it till lightly brown and cool this giant pizza cookie up.
    Next, mix cream cheese, powdered sugar and about a tsp of vanilla up….it’s an 8oz package of cream cheese with about a half cup of sugar, more or less to your sweet tooth.
    Now spread the cream cheese over the giant cookie.
    Then goes the fruit, either in a fancy design or randomly.
    Make a bit of a glaze with some marmalade and a bit of lemon juice and put a dash on the fruit, especially the on fruit that might turn black-say banana.
    This is so yummy. All the tastes just blend together so great. Summer fruit is usually the best, ripe and fresh!

  9. I have a apple crisp recipie from the D.C. Super Heroes Super Healthy Cookbook that I got when I was really little. It’s fast and delicious!
    you need:
    4-5 apples
    3/4 cup flour
    3/4 cup brown sugar
    1/2 teaspoon cinnamon
    1/2 teaspoon nutmeg
    1/4 teaspoon salt
    1/3 cup melted butter

    1. Peel and cut up apples. Put pieces in pie pan. (I don’t always peel the apples, I think that it tastes fine either way.)
    2. Put salt, flour, sugar, cinnamon, nutmeg in bowl. Melt butter in saucepan and pour in bowl. Mix with fork
    3. Spoon mixture over apples in pan, covering completely. Bake at 375 for 35 minutes, or until apples are soft.

  11. Love your blog, cartoons and creations. You inspire me! Try frozen phyllo dough. There are many ideas on the web and helpful suggestions to low cal alternatives to pie and cookie dough.

  12. YUM! I love inventions. Take a recipe and make it your own. I had a cookie today that had cream cheese in the middle. How good does that sound?

  13. both of those desserts sound yum! They shouldn’t take that long to make. Do you have a food processor? If you do, you can whip up a batch of sweet short crust pastry in 5 minutes, with no resting time needed.

    Sweet short crust pastry
    1/2cup self raising flour
    1/2cup plain flour (all purpose?)
    1/2 cup caster sugar
    60grams butter (3 tablespoons)
    water

    Put the flours, sugar and butter in the food processor. Blend until it all comes together well (butter is even throughout the flour mix). Add a little water to the dough and process again. Continue to add small amounts of water until it forms a ball in the processor (make sure the machine is going the whole time). At this stage, it is ready. Drop onto a floured bench top and either roll out or knead. The more you knead it the more developed the gluten will become and the tougher it will become also.

    You can blind bake the pastry if you really want or just add the filling and pop on a top and bake for about 20 minutes in a medium oven.
    If you take out the sugar you can use the pastry to make your own meat pies, or things like that. Of course you can change things around to suit yourself, maybe add spices to the pastry.

    Another simple dessert is store bought custard poured over chopped fresh fruit.

  14. Apple crisp!

    - Peel & slice 3-4 lbs. tart apples (Granny Smith)
    - Fill 9×13″ pan to top
    - Sprinkle with cinnamon
    - In a separate bowl, mix:
    2 sticks butter
    1 cup sugar
    1 cup brown sugar
    2 cups flour
    pinch salt

    - Mix with hands until crumbly.
    - Pack on top of apples.
    - Bake at 350 degrees for 45-50 minutes
    - Check by sticking in a fork – should come out smoothly

  17. wow, so many fruit cobbler recipes! i was thinking of jello type desserts, especially when the weather is warm. by the way, i make your bread pudding and it’s always good. my family thinks i’m a goddess!!
