Caramel Walnuts


I finally made the caramel walnuts. Last time I ate them all before I even got to frying them up. It was easy to make.

I took four cups of walnuts and simmered them for 5 minutes. I then drained them and paper towel dried them. Then I mixed them in with a cup of sugar.

This is the part where I got stuck on last time. I’m supposed to spread them out to dry for about 2 hours or even overnight and then fry them up. But last time at this stage I ate them all up.

So this time I thought ok no overnight waiting, just 2 hours or I’ll eat them all and it worked. I actually got around to frying them up in peanut oil until golden brown and then sprinkled them with sesame seeds.

Oh note. Last time around I DID NOT make 4 cups which I then inhaled. Gawd, I made myself sound like a total ravenous vacuum cleaner. I think I only had about a cup last time around after making my pesto which I then nibbled on until it seemed a waste of time to fry up such a small amount. It took a couple of days of nibbling before I finished it. I don’t know why I made so many this time around. It took me so long to eat the last batch. Oh well at least they’ll stay good for 2 weeks.

    No more - plz. I can only take so many of your food photos and cute drawings in one day. It is good that you are eating for 12. Then I don’t feel so untalented ! Or like such a loser for not cooking lovely meals. But now I feel guilty for saying that…arggggg !
